A classic skillet recipe for tender chicken smothered in rich onion gravy, perfect for a comforting family meal.

Ingredients

Scale
  • 4 bone-in, skin-on chicken pieces (thighs or breasts)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 1/2 cups chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Pat the chicken pieces dry with paper towels. Season generously with salt and pepper.
  2. Place the flour in a shallow dish and dredge each chicken piece in the flour, shaking off any excess.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken pieces, skin-side down, and sear until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  4. Reduce the heat to medium. Add the sliced onion to the skillet and cook, stirring occasionally, until softened and lightly browned, about 8-10 minutes.
  5. Add the minced garlic and cook for 1 minute more until fragrant.
  6. Sprinkle the remaining flour over the onions and garlic. Stir well and cook for 1-2 minutes to form a roux.
  7. Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer, stirring constantly, until the gravy begins to thicken.
  8. Stir in the Worcestershire sauce and dried thyme.
  9. Return the chicken pieces to the skillet, nestling them into the gravy.
  10. Cover the skillet, reduce the heat to low, and simmer for 25-30 minutes, or until the chicken is cooked through and tender.
  11. Garnish with fresh parsley before serving.

Notes

  • Serve hot over rice or mashed potatoes to soak up the delicious gravy.
  • For a deeper flavor, you can use chicken thighs.
  • Ensure your skillet is large enough to hold all the chicken pieces comfortably.
