This recipe delivers the ultimate crowd-pleasing, gooey, and cheesy hot spinach artichoke dip. It is simple to make and perfect for parties or a comforting snack.
1 (14 ounce) can artichoke hearts, drained and roughly chopped
8 ounces cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1 cup shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
Pinch of red pepper flakes (optional)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8-inch pie plate or small baking dish.
In a medium bowl, combine the dry spinach, chopped artichoke hearts, softened cream cheese, sour cream, and mayonnaise. Mix until just combined.
Stir in the Parmesan cheese, minced garlic, salt, pepper, and red pepper flakes, if using.
Fold in half (1/2 cup) of the mozzarella cheese.
Spread the mixture evenly into the prepared baking dish.
Top the dip with the remaining 1/2 cup of mozzarella cheese.
Bake for 20 to 25 minutes, or until the dip is hot throughout and the cheese on top is bubbly and lightly golden brown.
Let the dip cool for 5 minutes before serving warm with tortilla chips, pita bread, or vegetable sticks.
Notes
Squeeze as much liquid out of the thawed spinach as possible; excess water makes the dip runny.
You can assemble this dip ahead of time and keep it covered in the refrigerator for up to 24 hours before baking. Add 5 to 10 minutes to the baking time if baking straight from the fridge.
For a slow cooker version, combine all ingredients, place in a small slow cooker, and cook on LOW for 2 hours or HIGH for 1 hour, stirring halfway through.
