Ingredients

Scale
  • 1 pound flank steak or sirloin, trimmed
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 baguette, sliced into 1/2-inch thick pieces
  • 2 tablespoons olive oil for brushing
  • 1 large yellow onion, thinly sliced
  • 1 tablespoon butter
  • 1 teaspoon brown sugar
  • 1/2 cup sour cream
  • 2 tablespoons prepared horseradish
  • 1 tablespoon fresh chives, chopped

Instructions

  1. Season the steak with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the steak for 3 to 4 minutes per side for medium-rare. Remove the steak from the heat, let it rest for 10 minutes, then slice thinly against the grain.
  2. While the steak rests, prepare the onions. Melt the butter in a separate skillet over medium heat. Add the sliced onion and cook slowly, stirring occasionally, for 15 to 20 minutes until deeply softened and caramelized. Stir in the brown sugar during the last 5 minutes of cooking. Remove from heat.
  3. Preheat your oven to 375 degrees Fahrenheit. Brush both sides of the baguette slices lightly with olive oil. Arrange them on a baking sheet and toast for 8 to 10 minutes, flipping halfway through, until golden brown and crisp.
  4. Prepare the horseradish sauce. In a small bowl, combine the sour cream, prepared horseradish, and a pinch of salt. Mix well until smooth.
  5. Assemble the crostini. Spread a small amount of the horseradish cream onto each toasted baguette slice. Top with a few slices of the cooked steak. Place a small amount of caramelized onions over the steak.
  6. Garnish each steak crostini with a sprinkle of fresh chives before serving.

Notes

  • For a different flavor profile, substitute the horseradish sauce with a drizzle of balsamic glaze and a few fresh basil leaves for elegant small bites.
  • If you are preparing these for a large gathering, you can cook the steak and caramelize the onions ahead of time. Assemble just before serving to keep the bread crisp.
  • Use a good quality baguette; the crunch of the toasted bread is key to this appetizer.
