A quick and easy recipe for incredibly creamy stovetop mac and cheese, perfect for a weeknight meal or a crowd-pleasing side dish.

Ingredients

Scale
  • 1 pound elbow macaroni
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 4 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyere cheese

Instructions

  1. Cook macaroni according to package directions. Drain and set aside.
  2. In a large saucepan or Dutch oven, melt butter over medium heat. Whisk in flour and cook for 1 minute, whisking constantly.
  3. Gradually whisk in milk and heavy cream until smooth. Bring to a simmer, whisking often, and cook until thickened, about 5-7 minutes.
  4. Remove from heat. Stir in salt, pepper, and paprika.
  5. Add shredded cheeses gradually, stirring until completely melted and smooth.
  6. Add cooked macaroni to the cheese sauce and stir to coat evenly.
  7. Serve immediately.

Notes

  • For an even richer sauce, use a blend of cheeses like sharp cheddar, Gruyere, and Monterey Jack.
  • If the sauce becomes too thick, you can thin it with a little extra milk or cream.
  • Garnish with fresh parsley or breadcrumbs if desired.
