I am happy you are here! This easy, one-bowl recipe makes a wonderfully moist strawberry bread packed with fresh fruit. Top it with a simple vanilla glaze for a perfect breakfast loaf or sweet snack.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 1/2 cups fresh strawberries, hulled and diced
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon milk or cream (for glaze)

Instructions

  1. Preheat your oven to 350 degrees F. Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set this dry mixture aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. This is where we build flavor.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Alternate adding the dry ingredient mixture and the buttermilk to the wet ingredients, beginning and ending with the dry mixture. Mix only until just combined; do not overmix the batter.
  6. Gently fold in the diced fresh strawberries using a spatula. You want to distribute them evenly without crushing them.
  7. Pour the batter into your prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the strawberry bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  10. While the bread cools, prepare the glaze: Whisk together the powdered sugar and milk or cream until smooth. Add more milk if you prefer a thinner glaze.
  11. Once the loaf is completely cool, drizzle the vanilla glaze over the top. Slice and serve your homemade strawberry loaf.

Notes

  • For the best texture, make sure your fresh strawberries are diced small so they distribute evenly throughout the batter.
  • If you want a richer flavor, substitute the vanilla extract with almond extract.
  • This recipe is excellent for using up ripe, seasonal fruit.
