Make soft-baked strawberry cake mix cookies that are chewy and full of flavor. This quick cookie recipe uses only four ingredients and rolls in powdered sugar for perfect crinkly tops. These are easy cake mix cookies ready fast.

Ingredients

Scale
  • 1 box (15.25 ounces) strawberry cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a medium bowl, combine the strawberry cake mix, vegetable oil, and eggs. Mix with a spoon or electric mixer until just combined into a thick dough. Do not overmix.
  3. Place the powdered sugar in a shallow dish.
  4. Scoop the dough into balls, about 1 tablespoon each. Roll each dough ball completely in the powdered sugar until fully coated.
  5. Place the coated dough balls onto the prepared baking sheets, leaving about 2 inches between them.
  6. Bake for 9 to 11 minutes. The cookies will look soft when you remove them.
  7. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely. The tops will crinkle as they cool.

Notes

  • For chocolate chip strawberry cookies, fold 1/2 cup of mini chocolate chips into the dough before rolling.
  • If you prefer a lemon glazed strawberry cookie, skip the powdered sugar and top the cooled cookies with a simple glaze made from 1 cup powdered sugar mixed with 2 tablespoons of fresh lemon juice.
  • These cookies are a great budget friendly baking option for quick desserts.
