Ingredients
Scale
1 (15-ounce) box refrigerated pie crusts (or your favorite buttery pie crust recipe)
2 cups cooked and mashed sweet potatoes (about 3 large potatoes)
1 (12-ounce) can evaporated milk
1 cup granulated sugar
2 large eggs, lightly beaten
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/4 cup unsalted butter, melted
Instructions
Preheat your oven to 425 degrees F. Place one pie crust into a 9-inch pie plate. Trim and crimp the edges as desired.
In a large bowl, combine the mashed sweet potatoes, evaporated milk, granulated sugar, eggs, and vanilla extract. Mix until smooth.
Stir in the cinnamon, nutmeg, ginger, and salt. Mix well to distribute the spices evenly.
Slowly mix in the melted butter until the filling is fully combined and creamy.
Pour the sweet potato filling into the prepared pie crust.
Bake at 425 degrees F for 15 minutes.
Reduce the oven temperature to 350 degrees F. Continue baking for 35 to 45 minutes, or until a knife inserted near the center comes out clean.
Let the pie cool completely on a wire rack before slicing. Serve at room temperature or slightly chilled, perhaps with a dollop of whipped cream.
Notes
For the creamiest texture, ensure your sweet potatoes are fully cooked and mashed without lumps. You can bake or boil them until very tender.
If you prefer a deeper flavor, substitute half of the granulated sugar with packed light brown sugar.
This pie is excellent made a day ahead of time and stored in the refrigerator.
