Ingredients

Scale
  • 1 tablespoon neutral oil
  • 1 pound ground chicken
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup water or chicken broth
  • 2 tablespoons soy sauce or tamari (for gluten-free)
  • 1 tablespoon brown sugar or maple syrup
  • 1 teaspoon sriracha or chili garlic sauce (adjust to taste)
  • 1/2 cup shredded carrots
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped green onions, divided
  • 1 head butter lettuce or romaine, leaves separated and washed
  • For the Sauce: 3 tablespoons creamy peanut butter
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon honey or maple syrup
  • 1–2 tablespoons hot water (to thin)

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the peanut butter, lime juice, soy sauce, and honey. Add hot water one tablespoon at a time until the sauce reaches a smooth, pourable consistency. Set aside.
  2. Heat the oil in a large skillet or wok over medium-high heat. Add the ground chicken and cook, breaking it up with a spoon, until it is browned and cooked through, about 5 to 7 minutes.
  3. Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
  4. Pour in the water or broth, soy sauce, brown sugar, and sriracha. Stir well to combine and let the mixture simmer for 2 minutes, allowing the sauce to reduce slightly.
  5. Stir in the shredded carrots, red bell pepper, and half of the green onions. Cook for 1 more minute until the vegetables are slightly softened but still crisp.
  6. Remove the skillet from the heat. Taste the chicken mixture and adjust seasoning if needed.
  7. To assemble, place a spoonful of the chicken filling into each lettuce cup. Drizzle generously with the peanut lime sauce.
  8. Garnish with the remaining green onions and serve immediately.

Notes

  • For a low-carb meal plan, skip added sugar in the sauce and use only a small amount of sriracha for flavor.
  • You can prepare the chicken filling ahead of time for fast assembly later. This recipe works well for meal planning.
  • Use large, crisp lettuce leaves like butter lettuce or iceberg for the best cup shape.
