2 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
6 cups fresh tomatoes, chopped
4 cups vegetable broth
1 tsp salt
1/2 tsp black pepper
Optional: 1/2 cup heavy cream or coconut milk for creamy version

Instructions
Heat olive oil in a large pot over medium heat.
Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more until fragrant.
Add chopped tomatoes and vegetable broth to the pot.
Bring to a simmer, then reduce heat and cook for 15 minutes, or until tomatoes are very soft.
Carefully transfer soup to a blender or use an immersion blender to puree until smooth.
Return soup to the pot. Stir in salt and pepper.
If making a creamy version, stir in heavy cream or coconut milk. Heat gently without boiling.
Serve hot, garnished with fresh basil if desired.
Notes
For a richer flavor, you can roast the tomatoes before adding them to the pot.
This soup freezes well. Let it cool completely before transferring to freezer-safe containers.
