Cook tender, flavorful tuna steaks quickly using a simple soy-ginger marinade. This recipe works well for pan-searing or grilling and is ideal for a healthy weeknight dinner.

Ingredients

Scale
  • 2 (6-ounce) tuna steaks (about 1 inch thick)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon honey or brown sugar
  • 1 tablespoon high-heat cooking oil (like avocado or canola)
  • Salt and black pepper to taste

Instructions

  1. Combine the soy sauce, rice vinegar, sesame oil, ginger, garlic, and honey in a shallow dish. This creates your quick marinade.
  2. Place the tuna steaks in the marinade. Turn them to coat completely. Let them marinate for 10 to 15 minutes. Do not marinate longer, especially if using thin steaks.
  3. Remove the tuna from the marinade and pat them dry with paper towels. Discard the remaining marinade. Season both sides of the steaks lightly with salt and pepper.
  4. Heat the cooking oil in a heavy skillet (cast iron works best) over medium-high heat until the oil shimmers.
  5. Carefully place the tuna steaks in the hot skillet. Sear for 1.5 to 3 minutes per side for rare to medium-rare, depending on thickness. You want a nice brown crust on the outside.
  6. Remove the tuna steaks from the skillet. Let them rest on a cutting board for 5 minutes before slicing against the grain.

Notes

  • For a blackened flavor, substitute the marinade with a dry rub of paprika, cayenne, salt, and pepper before searing.
  • If you prefer a different cooking method, you can grill these steaks over medium-high heat for 2-3 minutes per side.
  • This quick preparation method is a great alternative to complex meal planning services.
  • Serve with a side salad or steamed vegetables for a complete, healthy meal.
