A hearty and festive plant-based centerpiece perfect for your holiday table. This savory roast features a blend of nuts, mushrooms, and lentils for a satisfying texture and rich flavor.

Ingredients

Scale
  • 1 cup walnuts, toasted
  • 1 cup pecans, toasted
  • 1 cup brown lentils, cooked
  • 1 cup cremini mushrooms, finely chopped
  • 1 cup yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup celery, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup breadcrumbs (gluten-free if needed)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a loaf pan.
  2. In a food processor, pulse the toasted walnuts and pecans until they form coarse crumbs. Transfer to a large bowl.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion, mushrooms, celery, and garlic. Cook until softened, about 8-10 minutes.
  4. Add the cooked lentils, sautéed vegetables, chopped parsley, breadcrumbs, soy sauce (or tamari), thyme, sage, pepper, and salt to the bowl with the nut crumbs. Mix thoroughly until well combined.
  5. Press the mixture firmly into the prepared loaf pan, ensuring an even layer.
  6. Bake for 35-40 minutes, or until the roast is firm and lightly browned on top.
  7. Let the roast cool in the pan for at least 15 minutes before inverting it onto a serving platter. This helps it hold its shape.
  8. Slice and serve warm with your favorite vegan gravy.

Notes

  • For a more ‘meaty’ texture, you can add 1/2 cup of cooked quinoa to the mixture.
  • This roast can be assembled a day in advance and refrigerated before baking.
  • Serve with a rich vegan mushroom gravy for an extra layer of flavor.
  • Garnish with fresh herbs and cranberries for a festive presentation.
  • Consider this a great option for meal planning, as leftovers can be enjoyed in sandwiches or crumbled into salads.
