Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional, for mild heat)
  • 4 cups low-sodium chicken broth
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 1 (4-ounce) can diced green chilies
  • 1/2 cup heavy cream or half-and-half (optional, for creamy style)
  • Salt and freshly ground black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños, avocado

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until lightly browned on all sides. Remove chicken from pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic, cumin, chili powder, oregano, and cayenne pepper (if using) and cook for 1 minute more until fragrant.
  3. Pour in chicken broth, scraping up any browned bits from the bottom of the pot.
  4. Add the rinsed and drained cannellini beans and diced green chilies to the pot. Bring to a simmer.
  5. Return the chicken to the pot. Reduce heat to low, cover, and simmer for at least 20 minutes, or until chicken is cooked through and tender.
  6. If you prefer a creamy chili, stir in the heavy cream or half-and-half during the last 5 minutes of cooking.
  7. Season with salt and pepper to taste.
  8. Serve hot, with your favorite toppings.

Notes

  • For a slow cooker version, combine all ingredients except cream and toppings in a slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours. Stir in cream during the last 30 minutes if desired.
  • Adjust cayenne pepper to control the heat level.
  • This chili is a great base for meal planning, similar to using meal delivery services for convenience.
  • Consider this a healthy chicken chili option for your weekly rotation.
