Ingredients

Scale
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 4 tablespoons unsweetened cocoa powder
  • 1/2 cup unsalted butter
  • 1/4 cup peanut butter
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking rolled oats

Instructions

  1. Combine the sugar, milk, cocoa powder, and butter in a medium saucepan.
  2. Bring the mixture to a full, rolling boil over medium heat, stirring constantly. Boil for exactly one minute. Do not overcook.
  3. Remove the saucepan from the heat immediately. Stir in the peanut butter and vanilla extract until fully combined and smooth.
  4. Quickly stir in the rolled oats until they are evenly coated with the chocolate mixture. Work fast, as the mixture will set quickly.
  5. Drop rounded tablespoons of the mixture onto wax paper or parchment paper laid on a baking sheet.
  6. Let the cookies cool completely at room temperature, about 30 minutes, until firm.

Notes

  • For best results, use quick-cooking oats, not old-fashioned or steel-cut oats.
  • If you are looking for easy cleanup desserts, line your work surface with parchment paper before dropping the cookies.
  • This recipe is great for last minute cookie ideas since it sets quickly.
  • If you are interested in meal planning for quick weeknight desserts, these require minimal active time.
