Transform your sourdough discard into soft, fluffy dinner rolls ready in about an hour. This easy, same-day recipe minimizes waste and delivers delicious homemade buns perfect for any meal.

Ingredients

Scale
  • 1 cup active sourdough discard (unfed starter)
  • 1 cup warm milk (about 105-115°F)
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 3 cups all-purpose flour, plus more for dusting
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 tablespoons melted butter, for brushing

Instructions

  1. In a large bowl, whisk together the sourdough discard, warm milk, 2 tablespoons melted butter, and the egg until combined.
  2. In a separate bowl, whisk together the flour, sugar, salt, baking soda, and baking powder.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface. Knead for 5 to 7 minutes until the dough is smooth and elastic. It will be slightly sticky.
  5. Divide the dough into 12 equal pieces. Roll each piece into a tight ball.
  6. Arrange the dough balls close together in a greased 9×13 inch baking pan for pull-apart rolls, or spaced apart on a baking sheet for individual rolls.
  7. Cover the pan or sheet loosely with plastic wrap or a clean kitchen towel. Let the rolls rest in a warm spot for 30 to 45 minutes. They will puff up slightly.
  8. Preheat your oven to 375°F (190°C).
  9. Bake for 15 to 18 minutes, or until the tops are golden brown.
  10. Immediately brush the tops of the hot rolls with the remaining 2 tablespoons of melted butter.
  11. Serve warm as a side dish or for sandwiches.

Notes

  • For a richer flavor, use whole milk in this recipe.
  • If your kitchen is cold, place the covered dough in a slightly warm oven (turned off) to speed up the resting time.
  • These rolls freeze well after cooling; simply reheat in the oven or microwave to refresh.
