Ingredients
Scale
1 pound ground beef
1 packet (1 ounce) taco seasoning
1 can (16 ounces) refried beans, not fat-free
8 ounces cream cheese, softened
1 cup sour cream
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
1/2 cup salsa
1/4 cup chopped green onions, for topping
1/4 cup sliced black olives, for topping
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9-inch pie plate or an 8×8 inch baking dish.
Cook the ground beef in a skillet over medium heat until fully browned. Drain off any excess grease.
Stir the taco seasoning into the cooked ground beef and set aside.
In a medium bowl, combine the softened cream cheese, sour cream, Monterey Jack cheese, and cheddar cheese until smooth. This forms your creamy base.
Spread half of the cream cheese mixture evenly into the bottom of your prepared baking dish.
Spread the refried beans evenly over the cream cheese layer.
Top the beans with the seasoned ground beef mixture.
Dollop the remaining cream cheese mixture over the beef layer and gently spread it out.
Pour the salsa evenly over the top layer.
Bake for 20 to 25 minutes, or until the dip is hot throughout and the cheese is melted and bubbly.
Remove the dip from the oven. Top with chopped green onions and sliced black olives.
Serve warm with tortilla chips. This dip is a great alternative to complex meal planning for game day.
Notes
For a spicier dip, add 1/2 cup of diced jalapeños to the beef mixture or use a spicy taco seasoning.
If you skip the meat, this becomes a fantastic hot bean dip.
To make this a richer, layered dip, consider adding a layer of shredded Colby Jack cheese before the final bake.
